The Chipper Chipmunk May 1st Challenge- Healthy Meals & Snack Ideas


Hi Chipper Chipmunk Tribe!

I hope you’re all having an AWESOME weekend!  Are you getting fired up for the May 1st challenge and all of the delicious, healthy meals we’ll be eating for the next 31 days AND beyond?!  I know I am!  The effects that these super-powered whole foods have on our bodies is undeniable and I can’t wait to get this party started!  I want this experience for you to be SO FUN, EDUCATIONAL, MOTIVATING, and INSPIRING that you’ll WANT to continue this way of eating as a LIFESTYLE and not just for the month of May.

Eating fruits, veggies, whole grains, healthy fats, and protein is what our cells need to keep our bodies functioning at maximum capacity.  Contrary to the stigma of nutricious food tasting like cardboard, it really can taste FANTASTIC if you have recipe gurus that can steer you down the “path of enlightenment”.


I’ll be sharing some of my favorite recipe gurus with you during this journey, as well as some of my own tasty creations that I’ve thrown together over the years.  Here’s just a sampling of the foods you can chow down on (WITHOUT guilt) during the 31 days:

Breakfast: (Recipes and Pictures to Come!)

  • Sweet potato waffles
  • Overnight oats and chia seed pudding
  • Egg omelette scrambles and muffins
  • Super-charged coffee and matcha tea
  • Green smoothies
  • Steel cut oats and berries
  • Coconut yogurt with cinnamon and fresh fruit
  • Oat pancakes with almond butter and organic turkey bacon

Lunch: (Recipes and Pictures to Come!)

  • Organic chicken with steamed veggies
  • Jumbo tasty salads loaded with fresh veggies, protein, healthy fats like avocado and chia seeds, and sugar-free, gluten-free dressings
  • Green superfood power smoothies
  • Organic turkey wraps loaded with veggies and avocado
  • Grass-fed beef burger patties on whole grain buns and sweet potato fries

Dinner: (Recipes and Pictures to Come!)

  • Quinoa or brown rice protein, veggie bowls
  • Baked almond crusted salmon with roasted asparagus
  • Spaghetti squash pasta with grass-fed beef or organic turkey meatballs
  • Jumbo greek salad with organic chicken, goat cheese and fresh red onion

  • Pumpkin gluten-free muffin with greek yogurt
  • Chocolate chia seed pudding
  • Carrot cake gluten-free power cookies
  • Icecream made from coconut milk and bananas
  • Veggie with hummus or guacamole dip
